Chicken Chow Mein (Serves 1) Calories 465

Ingredients 125g free range chicken breast mince
1 tsp sesame seed oil 20g red onion, chopped
2.5g minced garlic
30g carrot, diced 25g red capsicum, diced 25g green capsicum, diced
30mls chicken stock (diluted in boiling water)
2g curry powder
10mls sweet soy sauce 100g prepacked store brought coleslaw kit 10mls tamari sauce Serve with: 120g fresh singapore noodles (wokka brand) Sprinkle of crushed peanuts Squeeze of fresh lime
Method 1. Prepare the noodles as per the packet instructions. 2. Heat a fry pan over a medium and drizzle with the sesame oil. 3. Place onion and garlic into the pan and saute for a couple of minutes. 4. Add the chicken mince and saute until nearly cooked through. 5. Add the carrot and red/green capsicums into the pan and continue cooking.
6. Prepare the chicken stock as per the instructions on the tin. 7. Then add the chicken stock, curry powder, sweet soy sauce and tamari sauce into the pan.
8. Stir until the sauce until it is completely dispersed throughout the ingredients. 9.. Add the coleslaw and stir until the slaw starts to wilt. 10. Drain the noodles and place into the pan with the chow mein. 11. Stir until all ingredients are covered in the sauce. 12. Serve in a bowl and sprinkle with crushed peanuts and a squeeze of lime.
