Mixed Berry French Toast

Mixed Berry French Toast (Serves 1) Calories 363

P - 27g, C - 46g, F - 6g

Ingredients 2 slices wholemeal bread 80g liquid egg whites 1/2 tsp vanilla essence 1/2 tsp cinnamon Virgin Olive oil spray Top with: 20g blueberries 45g strawberries 100g plain greek yoghurt

10g Macro Mike peanut butter cinnamon

Method: 1. Cut the bread into halves.

2. Place the egg whites, vanilla essence and cinnamon into a bowl and whisk to combine. 3. Heat a fry pan over a medium heat and spray with the oil. 4. Dip each half of bread into the egg white mixture and place into the fry pan. 5. Continue to do this until all 4 slices are in the fry pan. 6. Cook on one side and then flip and cook on the other. 7. To serve, place the french toast on a plate, top with berries, drizzle of the peanut butter, sprinkle of cinnamon and lastly place the yoghurt in a small serving dish and place on the side of the plate. 8. Serve
