Sweet Baked Potato with Bolognese Sauce

Sweet Baked Potato with Bolognese Sauce (Serves 1) Calories 405 P - 35g, C - 38g, F - 12g

Ingredients 150g sweet potato, skin on, cut in half 100g reduced fat beef mince 100g Italian diced tomatoes (salt and sugar reduced) 1/2 tsp minced garlic 10g red onion, diced 1/2 tsp minced garlic 30g lite tzatziki dip 25g reduced fat shredded cheddar cheese olive oil spray salt and pepper Italian herbs coriander or parsley

Method 1. Preheat the oven at 200 degrees, prepare your sweet potato and place on a oven baking tray and spray with olive oil, garnish with salt and pepper and pop it into the oven for about roughly 45 mins (depending on the size of your sweet potato). 2. While your potato is cooking, heat a fry pan up over a medium heat and spray with some olive oil. Place the onion in the fry pan with garlic and stir fry for a couple of minutes. 3. Add in mince meat and diced tomatoes and continue to stir fry until cooked through. 4. Add salt, pepper and italian herbs to your liking and turn down heat and let it simmer for 15-20 mins to bring all the flavours out. 5. Once your sweet potato has cooked for about 20 mins (1/2 way) turn it over and cook it on the other side. 6. Once your potato is totally cooked through take it out of the oven and place it in a bowl. Top with your mince meat, grated cheese and tzatziki dip and garnish with coriander or parsley. #thankmelater
