“Build Your Own” Soft Chicken Satay Tacos


“Build Your Own” Soft Chicken Satay Tacos (Serves 1) Calories 417

P - 45g, C - 27g, F-8g Ingredients 150g raw chicken breast 20g red onion 25g red capsicum 40g celery 50g iceberg lettuce Coconut oil spray 1 wholegrain barley wrap 20g plain no fat greek yoghurt Fresh coriander Satay sauce: 5mls coconut aminos or tamari sauce 5mls sweet chilli sauce 10g raw peanut butter

Method 1. Dice the chicken, red onion, red capsicum and celery. Shred the lettuce. 2. Heat a fry pan over a medium heat and spray with coconut oil, place the onion, capsicum and celery into the pan and cook until soft. 3. Add the chicken and stir fry until nearly cooked. 4. In a seperate bowl, combine the peanut butter, coconut aminos and sweet chilli sauce (add a bit of water if not runny enough) and whisk together until combined. 5. Pour the sauce into the fry pan and stir through until all the chicken and vegetables are covered in the satay sauce. 6. Cut the barley wrap into quarters and place in the back of your serving plate, place the lettuce on one side of the dish. 7. Place the satay chicken on the other side of the dish and top with greek yoghurt and garnish with fresh coriander leaves. 7. Serve with a fork so you can build your own soft taco’s.
