Baked Mexican Sweet Potato

Baked Mexican Sweet Potato (Serves 1) Calories 493

Ingredients 150g sweet potato 120g shredded chicken, pre-brought 80g pre packed kale coleslaw kit (I got mine from Coles Supermarkets) 30g chunky salsa 15g avocado, mashed 30g Greek yoghurt Coconut oil spray Seasoning’s: Smoked paprika Taco seasoning from @physiquechef Salt and pepper

Method 1. Preheat the oven at 200c and place sweet potato on a baking tray, spray with coconut oil and sprinkle paprika, salt and pepper over it. 2. Place in oven for approx 30 minutes. 3. Once Potato is cooked turn off oven and keep hot. 4. Heat a fry pan over a medium heat and sprinkle taco seasoning over chicken. Stir fry in seasoning for a couple of minutes until heated through. 5. Once chicken is heated, remove the baked potato from oven and place in a serving plate, top with coleslaw, chicken, salsa, yoghurt and avocado.
