Blueberry and Lemon Overnight Oats (Serves 1) Calories 323

Ingredients 40g rolled oats 30g blueberries 50mls almond milk 30g plain no fat Greek yoghurt 2tsp black chia seeds 1/2 tsp vanilla essence 20mls sugar free maple syrup 1tsp lemon zest Serve with: 5g silvered almonds 5g pumpkin seeds 5g sunflower seeds 20g plain no fat Chobani yoghurt 1tsp lemon zest

Method 1. The night before mash 1/2 the blueberries and then combine with the oats, milk, yoghurt, chia seeds, vanilla, maple syrup and lemon zest. 2. Place in a mason jar and seal with the lid and pop in fridge. 3. In the morning stir up the oats and place in a bowl and top with pumpkin seeds, silvered almonds, sunflower seeds, yoghurt, the rest of the blueberries and lemon zest. 4. #serve and #enjoy
