Cajun Chicken (Serves 1) Calories 242
P - 20.4g, C - 12.5g, F - 12.4g Ingredients 150g organic chicken breast Coconut oil spray Marinade: 2 tsp minced garlic 1 tsp coconut oil, melted 10g oregano paste 5g mild chilli paste 1tsp ground paprika Salt and pepper (as much as like) Salsa: 150g tomatoes, diced 20g Spanish (red) onion, diced 50g green capsicum, diced 10g coriander herb paste 1tsp olive oil 1 tbsp fresh lime juice, squeezed Serve with: 2 cups green salad 1 tsp balsamic vingar wedge of lime Method 1. In a bowl, combine melted coconut oil, garlic, chilli, oregano, paprika, salt and pepper. 2. Slice chicken into smaller pieces and place into the marinade and stir through chicken until completely coated. 3. Refridgerate for about 15 mins or longer if you like. 4. In another bowl, place diced tomatoes, onion, capsicum, corinder paste, olive oil and lime juice and mix the ingredietns together. 5. Spray coconut oil into a fry pan and heat over a medium heat. Place chicken in the pan and cook one side and then flip and cook on the other side. 6. While the chicken is cooking cut up a green side salad (mine pictured has fresh spinach leaves, diced Lebanese cucumber, green beans and green capsicum) and drizzle with 1 tsp balsamic vinegar. 7. Place chicken, salsa and green salad on a serving plate with a wedge of lime and #enjoydinner !
