Caramelised Banana and Egg White Scrambled Eggs (Serves 1) Calories 232

Ingredients 70g sliced banana 3g dairy free butter (I used lite nuttalex) 100g liquid egg whites 1 tsp cinnamon 20g light smooth ricotta 22g 2 rice cakes Sugar free maple syrup
Method 1. Heat a pan over a medium heat and place butter in pan with the banana. 2. Stir the banana through the butter until the banana is soft and caramelised. 3. Add in egg whites and cinnamon and stir with a wooden spoon until eggs are scrambled with the banana. 4. Turn heat off and spread ricotta over rice cakes and place banana scrambled eggs on top of the rice cakes. 5. Squeeze maple syrup over the top and enjoy your snack!
