Chilli Chicken Stir Fry

Chilli Chicken Stir Fry (Serves 2) Calories: 312

Ingredients 250g chicken breast, diced 100g red capsicum, diced 100g zucchini, diced 100g mushrooms, diced 50g red onion, diced 100g snow peas 50g bean shoots 1tsp minced garlic 2tbsp fresh basil 1tsp coconut oil Sauces: 20mls niulife organic coconut aminos teriyaki 5mls niulife sweet chilli sauce 2mls niulife coconut syrup

Method 1. Heat oil in a fry pan over a medium heat and place onion and mince garlic in a pan. Fry until fragrant. 2. Add diced chicken breast and fry until nearly cooked through. 3. Add in capsicum, zucchini and mushrooms. Cook for 2-3 mins. 4. Add in snow peas and bean shoots and continue to cook for another 2 minutes. 5. Add in all the niulife sauces and stir until all combined. 6. Serve in 2 bowls, top with fresh basil.
