Ingredients 110g Chocolate protein powder (I used @happywayau - Chocolate) 60g Wholemeal plain flour 1 scoop of @coconutgreens powder (available to buy at use MERRI10 for you 10% discount at checkout) 25g Cacao powder 1 tsp baking powder 1/2 tsp baking soda 150mls Unsweetened Almond milk 1 cup of liquid egg whites (from the carton) 200g Zucchini, grated (keep the juices) 10g coconut oil, melted 1 tsp vanilla extract 15g raw organic nibs or choc chips 20g raw peanut butter Method 1. Preheat oven to 180 degrees 2. Line a 12 hole cup cake/muffin tin with papers. 3. Mix protein powder, flour, greens powder, cacao powder, baking powder and baking soda in a bowl. 4. In another bowl mix the Zucchini, egg whites, almond milk, melted coconut oil and vanilla extract. 5. Add the dry ingredients to the wet and combine together 6. Stir in the cacao nibs. 7. Place 2-3 tbs of mixture into each muffin/cupcake hole and place 1/4 tsp of peanut in the centre. 8. Place in the oven for about 15mins (check on it) until a metal skewer comes out clean!
