Chocolate Protein Mousse (Serves 4)

Ingredients 300g egg whites (liquid from the carton) 60 grams of 85% dark chocolate 100 grams extra light cream cheese 30g chocolate protein powder (I used @happywayau ) 2 tsp raw honey Berries to serve Method 1. Beat the egg whites until light and fluffy. 3. Add honey and continue to beat until dissolved. 4. Melt the dark chocolate in a small saucepan on low heat. 5. Once melted stir in the extra light cream cheese. Keep stirring until combined. 6. Fold the cream cheese mixture gently into the egg white mixture. Combine altogether. 7. Add your protein powder and continue to stir until all mixed together. 8. Get 4 ramekins and chop up some fresh berries (approx 70-80grams) in each and scoop 2 tablespoons of the mousse into each ramekin and pop in refrigerator to set for about 1 hour. 9. Enjoy 10. I stored the mouse in an air tight container for 4 days.
