Creamy Banana Rice Pudding (Serves 1) Calories 392

Ingredients 100g banana**, sliced 5g your choice of butter 50mls almond milk 60g brown basmati rice 100g liquid egg whites 20g vanilla or salted caramel protein powder (I used @happywayau - salted caramel ) 1 tsp cinnamon Serve with: 40g no fat plain greek yoghurt 5mls maple syrup Coconut chips (I used @knowrishwell - sea salt caramel flavour)
Method 1. In a pouring jug mix egg whites, cinnamon, protein powder and milk and stir until all combined. 2. Cook rice as per packet instructions. 3. Heat a saucepan over a medium heat and place butter and banana in saucepan and stir until banana is caramelised. 4. Pour in the egg white mixture and stir until nearly all cooked through. 5. Just before the egg mixture is cooked add in the cooked rice. 6. Keep stirring until the eggs are completely cooked. 7. Place rice pudding into a serving bowl. Top with yoghurt, maple syrup and coconut chips. 8. #serve and #enjoy ** You could use pineapple or mango if you don't like banana ** if you don't want to use protein powder just use 1 tsp vanilla essence instead.
