Egg White Scrambled Eggs with Winter Green Veggies and Haloumi (Serves 1)
P - 23g, C - 24g, F - 8g
Ingredients 65g green capsicum, diced 35g kale, chopped 80g Zucchini, diced 15g spring onion, diced 100g liquid egg whites 15g bean sprouts 25g organic haloumi cheese, sliced into strips Coconut oil spray Salt, pepper and a sprinkle of all purpose seasoning Served with: 1 x rye mountain bread with 10g hummus on it
Method 1. Prepare all veggies as outlined above. 2. Spray a fry pan with coconut oil spray and heat over a medium heat. 3. Add all veggies and cook for about 5 minutes. 4. Add egg whites, salt, pepper and seasoning to the dish and continue to stir until cooked. 5. Keep fry pan on and pop egg white scrambled eggs into a serving bowl. 6. Place haloumi cheese into fry pan and fry on each side for 1 min and then place on top of scrambled eggs. 7. Spread hummus over mountain bread and cut into quarters and serve on the side.
