Falafel Stir Fry with Lemon Tahini Dressing (Serves 1) Calories 308

Ingredients 150g butternut pumpkin, diced 150g stir fry veggies (I used shredded carrots, red cabbage, kale, broccoli and Wombok) 3 pre-made falafel’s Coconut oil spray Lemon Tahini Dressing: 5g Tahini 10g plain Greek yoghurt 1/4 tsp minced garlic 1tbsp freshly squeezed lemon juice 1tbsp water
Method 1. Heat a fry pan over a medium heat and spray with coconut oil spray. 2. Place butternut pumpkin in pan and stir fry for 5 minutes. 3. Place the remaining veggies into the pan and sauté for a couple of minutes. 4. Preheat falafel as per package instructions. 5. To make the dressing combine Tahini, juice, yoghurt, garlic and water in a small bowl and whisk to combine. 6. Place stir fry veggies and falafel’s into a serving bowl and drizzle the dressing over the top.
