Healthy Carbonara Zucchini Noodles (Serves 1) Calories 302
P - 23.8g, C - 8.3g, F - 19.6g Ingredients 100g Zucchini Salt, pepper & garlic powder 1 egg yolk 1 whole egg 1 slice triple smoked ham, roughly sliced 15g shredded Parmesan cheese Coconut spray oil Serve with: Fresh parsley, thinly diced 5g Parmesan cheese Method 1. If required to make the noodles, get a Zucchini spiraliser and make noodles as required. 2. Place the noodles in a bowl and coat with salt, pepper and garlic powder and stir through. 3. In a mixing jug combine egg, egg yolk and 3/4 of the Parmesan cheese and stir together. 4. Heat a fry pan over a medium heat with coconut oil spray and place the sliced ham in it and fry until crispy. 5. Add noodles in with the ham and cook for a couple of minutes. 6. Lastly, add the egg & cheese mixture in with the noodles and stir until all cooked throughly. 7. Serve in a bowl with the remainder of cheese and a sprinkle of parsley.
