Healthy Shepherds Pie (Serves 6) Calories 296
P - 22g, C - 44g, F - 8g Ingredients 800g sweet potatoes 500g extra lean mince meat 100g red onion, diced 10g minced garlic 60g tomato passata sauce 200g Italian diced tomatoes 150g frozen carrots, peas & corn 5g All purpose seasoning (@physiquechef ) 5g Pink Himalayan herb & garlic seasoning (@physiquechef ) 5g beef bone broth or beef stock powder Pepper 50g tasty shredded cheese Olive oil spray
Method 1. Preheat the oven to 180 degrees 2. Peel the potatoes and cut up into small pieces and place in a pot of boiling water and cook until nice and soft. 3. Pre-heat a fry pan over a medium heat with a spray of olive oil and place the diced red onion and garlic in the pan and sauté until soft. 4. Add the mince meat into the pan and stir fry until cooked through. 5. Add the tomato passata sauce, diced tomatoes, frozen carrots, peas and corn into the pan and stir for 5 minutes. 6. Add the seasonings, bone broth and pepper to your liking. 7. Continue cooking until the veggies are soft and then place the mince meat into a oven proof dish. 8. By now your potatoes should be nice and soft, drain the water out of the pot and mash the potatoes until all of the lumps are gone. 9. Place the mashed potatoes on top of the mince meat and scatter shredded cheese over the top. 10. Place the dish into riven for about 15-20 minutes until the cheese has melted. 11. Serve with a garden salad on the side.
