Merri's Healthy Nasi Goreng (Serves 1) Calories 298

Ingredients 120g chicken breast, diced
30g spring onion, diced 1/2 tsp minced garlic 50g carrots, sliced thinly 35g, red cabbage, shredded 35g green cabbage, shredded 10g bean shoots 10mls Organic Tamari soy sauce 10mls light sweet chilli sauce (use the Ayams brand) 5mls ketjap manis sauce 1 farm fresh organic eggs
10g bean shoots
Virgin Olive Oil Spray Black pepper Optional: 1 cup brown rice
Method 1. Place the olive oil in a wok and heat over a medium heat. Add the garlic and diced spring onion and cook until soft. 2. Add the diced chicken and stir fry until nearly cooked. 3. Add carrot, cabbages and bean shoots. Stir and cook together. 4. Add tamari, sweet chilli and ketjap manis sauces and stir through. Reduce wok heat and continue cooking. * *Add your cooked brown rice here if you want too. Stir the rice through the dish. 5. Heat another fry pan over a medium heat with a slight spray of olive oil. 6. Crack the egg into fry pan and cook only on one side, sprinkle black pepper over the egg. 7. Serve the Nasi Goreng in a bowl, place the bean shoots on top followed by the cooked egg on top.
