Ingredients 130g lean mince meat 5g taco spice mix 10g red onion, diced 100g tinned diced tomatoes 35g iceberg lettuce, shredded 50g cucumber, diced 50g cherry tomatoes, sliced 25g brown rice chips, crush them up 30g plain no fat greek yoghurt 20g avocado, mashed Coconut oil
Method 1. Heat a fry pan over a medium heat and spray with some coconut oil. 2. Place mince, onion and taco seasoning in the pan and stir until cooked. Add diced tomatoes and stir through. Turn heat off and leave in pan. 3. Place the lettuce, tomatoes and cucumbers in a bowl and place mince on top. 4. Place the yoghurt on top of the mince, followed by the mashed avocado. 5. Crush up the rice chips and scatter over the top of the dish. 6. Enjoy your Mexican amazing salad!!
