Mixed Berries Protein Microwave Muffin (Serves 1) Calories 378

Ingredients 30g organic rolled oats 30g banana, mashed * 8tbsp (60g) liquid egg whites vanilla protein powder (I used @happywayau) Sprinkle of cinnamon Serve with: 1 tbsp plain Greek yoghurt 100g Mixed berries Sugar free maple syrup

Method 1. Mash the banana and place in a ceramic dish with oats, liquid egg whites, protein powder and a sprinkle of cinnamon. Stir to combine all ingredients together. 2. Microwave for 60-90 secs and then check to see if cooked. If still soft in the centre then pop it on again for another 20-40 secs to cook through. 3. Serve in a bowl with a dollop of yoghurt, berries and maple syrup. 4. #enjoy *You could take out the banana just just a 2-3tbsp of water to keep the muffin moist!
