Mixed Berry Overnight Protein Oat Parfait


Mixed Berry Overnight Protein Oat Parfait (Serves 1) Calories: 386

P - 33g, C - 40g, F - 9g

Ingredients Overnight oats: 40g rolled oats 60g plain no fat greek yoghurt 50mls unsweetened almond milk 20g vanilla protein powder (I used @happywayau - vanilla) Served with: 40g plain no fat greek yoghurt 30g strawberries, diced 20g blueberries 10g raw peanut butter

Method 1. The night before place the oats, milk, protein powder and greek yoghurt in a jar and stir to combine. Seal with a lid and place in the fridge. 2. In the morning stir up the oats. 3. Place the berries in a covered microwavable container and place in the microwave for 20-30secs until all soft and runny. 4. In a mason jar place half of the berries at the bottom of the jar, followed by the oats, then the remainder of the berries and then the remainder of the oats. 5. Once all of the berries are out of the microwaveable container using the left over juices from the berries, place the yoghurt in the container and stir until the yoghurt is a nice pink colour. Now you have berry flavoured yoghurt! 6. Place the berry flavoured yoghurt on top of the oats, followed by the peanut butter and a strawberry for decoration!
