Naked Taco Salad Bowl (Serves 1) Calories 324

Ingredients 120g lean beef mince 10g red (Spanish) onion 5g taco seasoning Coconut oil spray Avocado salsa: 25g tomatoes, diced 15g avocado, mashed 20g Lebanese cucumber, diced 5g minced garlic 1/2 tsp coriander blend tube Serve with: Iceberg lettuce, shredded 20g plain no fat Greek yoghurt (I used @chobaniau Yoghurt) Fresh lime Fresh coriander 1 x taco shell, broken up (optional: not included calories/macros above)
Method 1. Heat a fry pan over a medium heat with and spray with coconut oil. 2. Add mince meat and onion and sauté together until nearly cooked through. 3. Add taco seasoning and keep cooking until all ingredients are combined and cooked throughly. 4. To make the Avocado salsa, combine mashed avocado, cucumber, minced garlic, tomatoes and coriander herb blend and stir until all combined together. 5. To serve place shredded lettuce in a serving bowl and then add mince meat, salsa and the Greek yoghurt on top. 6. Serve with lime wedges and sprinkle coriander over the top.
