P - 24g, C - 25g, F - 19g Ingredients 2 free range eggs, poached 50g avocado, mashed 25g low fat feta, diced 50g cherry tomatoes, diced 1tsp minced garlic Salt & pepper 20g fresh spinach 1 larger slice or 2 small slices of wholemeal/rye/seeded sourdough bread
Method 1. Poach eggs the way you like them. 2. Mash avocado with the diced tomatoes and feta. Combine together until all mixed. 3. Add minced garlic and salt and pepper to the mashed avocado. 4. Toast bread and place on plate, followed by smashed avocado (spread over toast) and then the poached eggs.
