Sweet Potato and Pumpkin Pancakes

Sweet Potato and Pumpkin Pancakes (Serves 1) Calories 400

P - 30g, C - 54g, F - 6g

Ingredients 80g precooked mashed sweet potato 70g precooked mashed butternut pumpkin 30g rolled oats (I used @themueslisugarfreerolled oats) 65g liquid egg whites 1/2 tsp baking powder 1 tsp cinnamon 15g vanilla protein powder (I used @happywayau )

Coconut spray oil Serve with: 80g mixed berries 30g YoPRO plain greek yoghurt 5g raw peanut butter Squeeze of sugar free maple syrup

Method 1. Pop your cooled mashed potato and pumpkin, oats, liquid egg whites, baking powder, cinnamon & protein powder into a blender and combine until the consistency is nice and smooth. 2. Preheat and fry pan over a medium heat and spray with coconut oil. 3. Place 2 tbsp per pancake mixture into the pan, and cook pancake on one side. Once bubbling flip and cook on the other side. Place on serving plate. 4. Repeat again until you have an amazing stack of cooked pancakes!!!

5. Top with Greek yoghurt, mixed berries, peanut butter and maple syrup. 6. These pancakes are amazing so eat slowly and totally enjoy them.
