Blueberry Protein Pancakes


Blueberry Protein Pancakes (Serves 1) Calories 406

P - 21g, F - 18g, C - 37g

Ingredients 40g rolled oats 15g protein powder ( I used @healthlab - coconut blend) 40g liquid egg whites (from the carton) 1-2 tbsp almond/coconut milk 1 tbsp coconut oil To serve: 1/2 cup blueberries Squirt of sugar free maple Dollop of low fat ricotta

Method 1. In a blender pop in oats, egg whites, protein powder & milk. Please note: if it isn't runny enough add some water. 2. Heat coconut oil over medium heat in a fry pan and dollop 2 tbsp of mixture per pancake into the pan. 3. Cook on one side and the flip them and cook on other. 4. Serve on plate with blueberries, ricotta and maple syrup. 5. Enjoy
