Mixed Berry Overnight Oats (Serves 1) Calories 382

Ingredients 30g rolled oats 2tbsp chia seeds 20g vanilla protein powder (I used @happywayau ~ vanilla) 100mls almond milk 1/4tsp cinnamon 1tbsp lemon zest (grated lemon rind) 2tsp lemon juice (freshly squeezed) 3/4 cup fresh or frozen mixed berries Serve with: 20g blueberries 30g low fat ricotta Crushed walnuts (optional ~ not included in the calories and macros above)

Method 1. The night before pop the oats, chia seeds, protein powder, almond milk, lemon zest and lemon juice in a jar and mix until all combined. 2. Pop mixed berries into the jar and mash with the back of a fork and stir into mixture. 3. The following morning stir up oat mixture and top with blueberries, ricotta and optional walnuts. 4. #enjoy
