Salted Caramel Protein Pancakes

Salted Caramel Protein Pancakes (Serves 1) Ingredients 40g rolled oats 15g protein powder (I used @happywayau - Salted Caramel flavour) 4tbsp liquid egg whites 1/4 tsp baking powder Coconut spray oil Serve with: 50g mixed berries 100g pineapple 1 tbsp @coyo_is_coconuts plain coconut yoghurt Cinnamon, sprinkled Maple syrup, sugar free, drizzled

Method 1. The night before pop the oats, protein powder, baking powder and egg whites into your blender container and place in the fridge to soak. 2. In the morning stir up the pancake mix and if not runny enough just add a little bit of water. 3. Blend all together until the mixture is nice and smooth. 4. Preheat a fry pan with coconut oil spray in it over medium hfeat and dollop 2tbsp per pancake in the pan. Cook on one side and then flip and cook on the other side. 5. Cut all the fruit up and place in a microwave safe container, cover and heat up for 40 secs until runny..

6. Serve with pineapple, mixed berries, maple syrup, coconut yoghurt and cinnamon over the top.
