Scrambled Eggs on Toast

Scrambled Eggs on Toast (Serves 1)


2 farm fresh eggs 50g diced cherry tomatoes

50g diced mushrooms

15g diced red onion

80g diced pre-cooked lemon pepper chicken

20g fresh spinach

1 slice of wholemeal chia toast

30g of mashed avocado

Method 1. Heat up a fry pan and spray with coconut oil

2. Scramble eggs with cherry tomatoes, mushrooms, red onion, chicken and fresh spinach for a couple of minutes. Season with salt and pepper.

3. Serve with avocado on toast
