Sweet Omelette with Blueberries


Sweet Omelette with Blueberries (Serves 1) Calories 235

P - 37g, C - 17g, F - 2g

Ingredients 8 tbsp liquid egg whites 15g protein powder (I used @happywayau ~ berry flavour) 20g low fat cottage cheese 1/4tsp baking powder Serve with: 100g no fat plain Greek yoghurt (I used @chobaniau ) 5g @physiquechef chocolate cinnamon scroll dust 40g blueberries Squirt of sugar free maple syrup

Method 1. Place egg whites into a bowl and beat until stiff. 2. Add cottage cheese, baking powder and protein powder into the bowl and continue to beat until all combined. 3. Spray coconut oil into a fry pan and heat over medium heat. 4. Pour mixture into pan and cook on one side and flip and cook onto the other side. 5. While cooking combine yoghurt and chocolate cinnamon scroll dust together. 6. Once cooked, place on a serving plate and place yoghurt mixture and blueberries down one side of the omelette. 7. Fold omelette in half, sprinkle with chocolate cinnamon scroll dust and a drizzle of maple syrup.
