Vanilla Protein Pancakes


Vanilla Protein Pancakes (Serves 1) Calories 410

P - 32g, C - 56g, F - 6g

Ingredients 50g rolled oats 20g protein powder (I used @skinnyminiprotein - vanilla ice cream) 4tbsp liquid egg whites 1/4 tsp baking powder Coconut spray oil Serve with: 50g mixed berries 100g pineapple Cinnamon, sprinkled Maple syrup, sugar free, drizzled

Method 1. The night before pop the oats, protein powder, baking powder and egg whites into your blender container and place in the fridge to soak. 2. In the morning stir up the pancake mix and if not runny enough just add a little bit of water. 3. Blend all together until the mixture is nice and smooth. 4. Preheat a fry pan with coconut oil spray in it over medium heat and dollop 2tbsp per pancake in the pan. Cook on one side and then flip and cook on the other side. 5. Serve with pineapple, mixed berries, maple syrup and cinnamon over the top.
