Baked Chicken Fajitas (Serves 2) Calories 373

P - 40.8g, C- 32.6g, F- 8.2g Ingredients 300g Chicken Breast, cut into thin strips 50g red capsicum (bell pepper), sliced thin 50g red capsicum (bell pepper), sliced thin 30g mushrooms, sliced thin 50g brown onion, sliced thin 200g diced Italian tomatoes, reduced salt 1/2tsp ground chilli spice 1tsp cumin spice 1tsp sweet paprika spice 1tsp ground oregano spice 1tsp garlic powder 1/2 tsp Himalayan salt 1tsp extra virgin olive oil 80g brown rice, cooked 30g avocado , mashed 30g plain low fat Greek yoghurt Fresh limes

Method 1. Preheat oven to 180 degrees celsius. 2. Dice and slice all vegetables as outlined above. 3. Add everything except the avocado, yoghurt and rice to a glass baking dish and use 2 spoons to combine together. 4. Bake in oven for approx 25 mins until chicken is cooked through. 5. Meanwhile cook brown rice as directed by package. 6. Place avocado in a bowl and mash with a back of a fork. 6. To serve, place rice at the bottom of a bowl, place chicken mixture on top of rice and then top with avocado and yoghurt and a slice of lime. 7. Enjoy!
