Banana Hot Cross Bun (Serves 1) Ingredients 1 free-range egg 90 grams mashed banana 3 tbsp quinoa flour 2 tsp milk of choice 1 tsp vanilla 1/2 tsp raw honey 10 grams crushed walnuts Pinch of baking powder Sprinkle of cinnamon Cross: 1 tbsp low fat plain Greek yoghurt 1 tbsp reduced fat ricotta
Method 1. Make one bun at a time by whisking an egg in a ceramic ramekin. 2. Then add the rest of the ingredients and stir until combined. 3. Pop into microwave for 60 secs. If still runny after 60 secs put on for another 60 secs until cooked all the way through. 4. Meanwhile mix the yoghurt and ricotta in a bowl and if you have an icing piper, Pipe the icing onto the bun to make the cross.. 5. Boil the kettle and serve with a herbal tea. 6.
