Banana Sundae


Banana Sundae (Serves 1) Ingredients Ice cream: 1 x banana 1 tsp vanilla essence Coconut whip: 1 tbsp low fat coconut cream, placed in the fridge for at least 1 hour Peanut butter drizzle: 1 tbsp raw peanut butter Water - enough to make it runny Chocolate sauce: 1 tbsp cacao powder Water - enough to make it runny Toppings: 1 tsp cacao nibs 1tsp crushed peanuts

Method 1: Slice the banana in place in a blender with vanilla. 2. Blend until smooth, scoop out and place in a freezer safe container. 3. Freeze for at least 1 hour. 4. Open the tin of coconut cream and scoop out the hard contents. Beat it up until it becomes creamy. Place back in fridge while completing the next steps. 5. To make the peanut butter drizzle, place the peanut butter in a small bowl and add water little by little until it becomes runny - not too runny though! 6. To make the chocolate sauce, mix cacao with water in a small bowl. Add a little at a time until it becomes runny as well. 7. To construct, scoop out frozen banana ice cream and place into a dessert glass, followed by 1 tbsp coconut whip, drizzle a small amount of the peanut and chocolate sauces and lastly garnish with a sprinkle of cacao nibs and peanuts.
