Cauliflower Alfredo with Zoodles

Cauliflower Alfredo with Zoodles (Serves 2)

Ingredients 1 tsp coconut oil 2 slices of short cut bacon (no fat), finely chopped 350g zucchini spiralised noodles 1tbsp flat leaf parsley, finely chopped, plus a little extra to serve Drizzle of olive oil 1tbsp Parmesan cheese Sauce: 1/2tbsp coconut oil 2tsp minced garlic 125mls of beef, chicken or vegetable salt reduced stock (plus a bit more if needed when making the sauce) 250g cauliflower, chopped Salt and pepper

Method 1. To make the sauce, melt the oil in a saucepan over medium heat. Add the garlic and sauté for 30 secs until soft. 2. Pour in the stock and add the cauliflower and bring to the boil. Cover with a lid and simmer on low heat until the cauliflower is nice and soft. 3. Blitz with a hand held blender until nice and smooth (no lumps). If the sauce is a bit thick add more of the stock and season with salt and pepper and keep warm over a low heat. 4. Melt the coconut oil in a fry pan over a medium heat. Add the bacon and sauté until nice and crispy, about 5 minutes. 5. Add the zucchini and cook for about 1 minute until almost cooked through. 6. Remove from heat and pour in the warm sauce, add the parsley and gently stir to combine. 7. Season with salt and pepper and drizzle some olive oil and scatter some parsley and parmesan cheese. 8. #serve
