Chicken and Green Vegetables Stir Fry (Serves 1) Ingredients 1/2 cup quinoa and brown rice pre cooked 120g chicken mince 40g green capsicum, diced 35g broccoli, diced 50g zucchini, diced 50g celery, diced 50g green beans, cut 50g green cabbage, sliced 85g snow peas, top and tails cut off Moroccan seasoning Salt and pepper 1tsp coconut oil
Method 1. Heat a fry pan over medium heat with the coconut oil and add chicken mince. Cook until nearly done. 2. Add the veggies, Moroccan seasoning, salt and pepper and continue to cook until veggies are soft. 3. Turn off heat and add the rice and stir until heated through. 4. Serve!
