Healthy Fish and Crunchy Kale Chips (Serves 1)
Ingredients 150g white fish 150g kale, roughly sliced 150g sweet potato, sliced and baked 2 cups mixed garden salad of your choice Sprinkle of garlic powder, BBQ seasoning, salt and pepper 1tsp coconut oil Coconut oil spray Wedge of lemon Method To make the sweet potato slices: 1. Heat oven on 200c and place the 1 tsp of coconut oil into a baking tray and heat the oil up (until very hot) in oven. 2. Slice sweet Potato into thin slices and once the coconut oil is sizzling hot, place the slices into the baking tray. 3. Stir the sweet potato around until the oil has completely coated them and season with salt and pepper. 4. Place them into the oven and turn timer on for about 20 minutes. After 20 mins take the sweet potato out of the oven and flips slices onto the other side to cook. 5. Place back into the oven for another 10 mins. 6. Roughly cut up the kale and place on a baking tray and spray with coconut oil, season with salt and pop in oven for about 3 mins. Keep an eye on them as they cook quickly! Take them out when they are nice and crunchy! 7. While the sweet potato and jake are cooking cut up a garden salad with your choice of veggies/salad 8. About 10 minutes before the chips and sweet potato are ready put the fish on. 9. Spray a fry pan with coconut oil and place fish into the pan and sprinkle with garlic powder, BBQ seasoning, salt and pepper. Cook on one side and then flip and cook on the other side. 10. Serve fish with kale chips, sweet potato, salad and a wedge of lemon. 10. #enjoydinner .
