Mixed Berry Zoats


Mixed Berry Zoats (Serves 1) 380 calories

P- 16g, C - 54g, F - 10g,

Ingredients 1/2 cup rolled oats 20g liquid egg whites 125mls almond milk 50g zucchini, grated 10mls maple syrup, sugar free 5mls vanilla essence 5g cinnamon Top with: 50g plain no fat Greek yoghurt 1/2 cup diced mixed berries 1tsp peanut butter

Method 1. Place oats and egg whites into a microwave safe dish and stir to combine. 2. Stir in grated zucchini, milk, cinnamon, vanilla and maple syrup. 3. Place in microwave on high for 2 minutes. Grab them out and stir and then pop them back in the microwave for another 1 min in 30 sec intervals stirring at each interval until the eggs and oats are cooked and nice and creamy! 4. Let it cool for a couple of minutes then top with yoghurt, mixed berries and peanut butter.
