Pea, Feta & Mint Fritters with a Green Salad (Serves 1) Ingredients 50 grams frozen or fresh peas 1 egg or liquid egg white (from the carton) 2 tbsp wholemeal self-raising flour 20 grams reduced fat feta, diced 1 tbsp stir in paste - mint Salt and pepper 30 grams spinach 80 grams Lebanese cucumber, diced 50 grams green capsicum, diced 1 tbsp balsamic vinegar Lemon, optional
Method 1. Combine and stir peas, egg, flour, feta, mint paste, salt & pepper together in a bowl. 2. Heat a fry pan over a medium heat (spray a little olive oil in the pan) and dollop 3 tbsp's of the batter into the fry pan. 3. Cook on one side until fritter's bubble and then flip and cook on the other side. 4. While these fritters are cooking combine spinach, cucumber and capsicum and serve on a plate. 5. Plate fritters on the same plate as the salad and pour balsamic into a small serving dish on pop on the side of the plate. 6. You could also squeeze some lemon all over the dish (salad and fritters) for extra flavour. 7. Enjoy!!!
