Poached Eggs with Spinach, Tomato and Avocado (Serves 1) Calories 338

Ingredients 2 free range eggs, poached 50g slice of pumpkin sourdough bread, toasted 30g Avocado, mashed 50g cherry tomatoes, diced 50g fresh spinach Coconut oil spray Chilli flakes Salt and pepper

Method 1. Poach your eggs to your liking. 2. Pop your bread into toaster and cook. 3. Mash your avocado and spread onto your cooked toast. 4. Heat a fry pan over a medium heat and spray with coconut oil spray and place tomatoes and spinach into pan, season with salt and pepper. 5. Stir fry tomatoes and spinach for a couple of minutes. 6. Place eggs onto toast and serve spinach and tomatoes on the side. 7. Sprinkle with some chilli flakes and salt and pepper. 8. Serve and #smashit
