Sweet Potato and Lamb Mince Healthy Pizza


Sweet Potato and Lamb Mince Healthy Pizza (Serves 1)

Ingredients 1 piece of spinach, mountain bread 100g sweet potato, diced 120g lamb mince 2 tbsp tomato passata 2 tbsp low fat mozzarella cheese 50g cherry tomatoes, diced 2 cups fresh spinach 1 tbsp Parmesan cheese Rosemary Salt and pepper Garlic powder Top with: 1tbsp hummus

Method 1. Preheat oven to fan forced 180 degrees. 2. Peel and dice the sweet potato into small cubes and place into a microwave safe dish and microwave for 2 minutes until soft. 3. Spread the tomato passata over the mountain bread and top with mozzarella cheese. 4. Preheat a fry pan over medium heat and cook the lamb mince with the rosemary until nearly cooked through and place on top of the mountain bread. 5. Place the diced tomato, cooked sweet potato and spinach on top of the lamb mince. 6. Sprinkle with Parmesan cheese, salt/pepper and garlic powder on top. 7. Place in oven for 7 minutes.. keep an eye on it as it cooks quickly!! 8. Top with hummus and serve!
