Sweet Pumpkin and Cinnamon Mousse (Serves 1) Calories 235
P - 18g, C - 20g, F - 8g
Ingredients 80g precooked mashed butternut pumpkin 100g low fat cottage cheese 50mls almond milk 1/2 tsp chocolate and cinnamon scroll dust (from @physiquechef ) squirt of sugar free maple syrup 5-10 drops of stevia liquid (depending on how sweet you like your mousse) Top with: 1/2 tbsp mayvers protein peanut butter 50g strawberries
Method 1. Pop butternut pumpkin, cottage cheese, almond milk, scroll dust, maple syrup and stevia into a blender and blitz until nice and smooth. 2. Pop into a serving bowl and place into the fridge to thicken up for about 1/2 hour. 3. To serve place peanut butter and strawberries on top. 4. So delicious!!
