Turkey Bolognese with Slendier Spaghetti (Serves 1) Calories 300

Ingredients 130g turkey mince 20g red onion, diced 50g cherry tomatoes, diced 55g carrots, diced 100g tomato passata sauce 3g beef bone broth or beef stock 125g @slendier spaghetti 1/3 cup boiling water 1/2 tsp garlic mince Italian herbs Salt & pepper Coconut oil spray Top with: 6g shaved parmesan cheese

Method 1. Prepare the slender spaghetti as per the packet instructions. 2. Heat a fry pan over a medium heat and spray with coconut oil. Place onion, garlic and mince into pan and stir fry until nearly cooked through. 3. Add carrots, cherry tomatoes and passata sauce. Sauté for a couple of minutes. 4. Dissolve the beef broth in the boiling hot water and tip into the sauce. 5. Add your desired herbs, salt and pepper. Stir through and simmer for 5-10 minutes. 6. If sauce gets a bit dry add more boiling water. 7. Place spaghetti in a serving bowl, top with sauce and a sprinkle of the Parmesan cheese. 9. Enjoy!
