Turkey Mince Chow Mein (Serves 4) Ingredients 500g turkey mince 1/2 brown onion, diced 1 bag kaleslaw from Coles ** 1 bag ranch slaw from Coles ** 1 bag pumpkin and carrot noodles from Coles 150g vegetable stock, low salt 1-2 tsp curry powder (depending on how hot you like the dish) 2 tbsp low salt soy sauce or Tamari soy sauce 2 tsp Sesame seed oil Serve with Crushed peanuts Fresh lime juice
Method 1. In a wok, pour sesame seed oil in and heat the pan until it is nice and hot. 2. Add garlic & onion and cook until soft. 3. Add turkey mince and cook until brown. 4. Add all the vegetables and cook until soft. 5. Add the vegetable stock and curry powder to your liking. *Make sure you taste it! Add more if you need it! 6. Add soy sauce and stir to spread flavours through the dish. 7. Just before serving microwave the pumpkin and carrot noodles for 2-3 minutes. 8. Place noodles in a serving dish and place chow mein over the top. 9. Serve with crushed peanuts and lime juice squeezed over the top.. Enjoy! ** Disregard the prepacked dressing from the Coleslaw packs.
