Turkey Mince Stir Fry

Turkey Mince Stir Fry (Serves 4) Ingredients 500g turkey mince 1 red onion, diced 2 tsp crushed garlic 1 zucchini, diced 1 green capsicum, diced 1 red capsicum, diced 1 x small piece of broccoli, chopped into small pieces 150g green beans, diced 20g spinach 150g vegetable stock, low salt 1-2 tsp curry powder (depending on how hot you like the dish) 2 tbsp low salt soy sauce 2 tsp Sesame seed oil Method 1. In a wok, pour sesame seed oil in and heat the pan until it is nice and hot. 2. Add garlic & onion and cook until soft. 3. Add turkey mince and cook until brown. 4. Add all the vegetables except the spinach and cook until soft. 5. Add the vegetable stock and curry powder to your liking. *Make sure you taste it! Add more if you need it! 6. Add soy sauce and stir to spread flavours through the dish. 7. Just before serving add spinach and stir through. 8. Serve Please note: you can make some brown rice and stir this through the dish if you want too as well! Enjoy! 😉
