Veggie Scrambled Eggs


Veggie Scrambled Eggs (Serves 1)

Ingredients 1 egg 4 tbsp liquid whites red onion, diced tomatoes, chopped Mushrooms, diced Spinach, fresh 1/2 wholegrain Muffin 30g mashed avocado Salt and pepper 1/4 tsp Garlic, minced Coconut oil

Method 1. Heat a fry pan over medium heat with coconut oil and place onion and garlic in it.. sauté until soft.. 2. Add in the rest of the veggies except the spinach. 3. Stir for a few minutes. 4. Add in eggs and stir until cooked with veggies. 5. Turn off heat and sprinkle spinach over egg mixture and stir until wilted. 6. Pop Muffin in toaster. 7. Mash avocado in a separate bowl and place on top of Muffin. 8. Serve eggs on plate with the muffin and @coconutgreens power drink!
