Mini Banana Microwave Cake (Serves 1)

Ingredients 10g coconut flour 50g liquid egg whites 80g Banana, mashed
2.5mls vanilla essence 2g chocolate and cinnamon scroll dust from www.physiquechef.com Serve with: 80g strawberries 80g plain no fat greek yoghurt mixed with 3mls sugar free maple syrup 10g dark chocolate choc chips
2g sugar free drinking hot chocolate
Method 1. Mash the banana and mix with the coconut flour, liquid egg whites, vanilla essence, chocolate and cinnamon scroll dust and place mixture into a ceramic bowl. 2. Place in the microwave for 90 secs, check and if not cooked through pop on for another 30-60 secs. 3. Cut around the sides of the cake and turn upside onto a plate and shake to release out of the ceramic bowl. 4. Turn the cake up the correct way, let cool and cut in half.
5. Combine the maple syrup with the yoghurt and spread half in the middle layer of the cake. Slice the strawberries in half and place on top of the yoghurt.
6. Place the top of the cake over the yoghurt and strawberries.
7. Place the rest of the yoghurt on the top of the cake, garnish with the choc chips, sprinkle of sugar free drinking chocolate and a strawberry.
8. Even a nice sprinkle of crushed walnuts would be amazing as well!
