Healthy Lamb Mountain Bread Pizza


Healthy lamb mountain bread pizza (serves 1) Calories 365 P - 42g, C - 24g, F - 10g

Ingredients 1 x mountain bread 30g pizza sauce 25g light mozzarella cheese 120g lean diced lamb (pre cooked) 25g red capsicum, diced 25g green capsicum, diced 10g fesh rocket 10g red onion, diced Diced basil Sauce: 40g plain greek yoghurt 1/4 garlic mince salt/pepper splash of lemon juice 10g grated cucumber

Method 1. Preheat the oven at 180 degrees and place baking paper onto a oven tray. 2. Spread the pizza sauce over the mountain bread and top with half of the cheese. 3. sprinkle the fresh basil over the base. 4. Top with the pre cooked lamb, red/green capsicum, onion and the remaining cheese. 5. Place in the oven for 10 minutes (keep on eye on it) 6. While that is cooking make the sauce by mixing greek yoghurt, salt/pepper, lemon juice and grated cucumber in a small bowl (add some water if it isn't running enough). 7. When the pizza is cooked top it with fresh rocket and drizzle the sauce over the top. 8. Enjoy your dinner!
