Beef Taco Salad Bowl

Beef Taco Salad Bowl (Serves 1) Calories 414 P - 34g, C - 29g, F - 37g

Ingredients 120g lean beef mince 10g red (Spanish) onion 10g taco seasoning (salt reduced) 50g iceberg lettuce, shredded 50g carrots, grated 50g cucumber, diced 20g avocado, mashed 40g mild salsa 25g falafel chips 30g plain no fat Greek yoghurt Fresh lime Fresh coriander Olive Oil

Method 1. Heat a fry pan over a medium heat with and spray with olive oil. 2. Add mince meat and onion and sauté together until nearly cooked through. 3. Add taco seasoning and keep cooking until all ingredients are combined and cooked thoroughly. 4. Shred the iceberg lettuce, grate the carrot, dice the cucumber and mash the avocado. 5. To plate, place the lettuce, carrot, cucumber on one side of a bowl. 6. Place the mince meat on the other side with the falafel chips. 7.Top with the avocado, salsa and yoghurt 6.
