Roast Chicken With Homemade Slaw On Sourdough (Serves 1)
P - 37g, C - 36g, F - 8g
2 slices of wholemeal sourdough bread
80g shredded roast chicken
30g purple cabbage, shredded
40g carrot, grated
5g dijon mustard
20g plain greek yoghurt
2mls lemon juice
1/3tsp minced garlic
1. To make the slaw dressing combine the dijon mustard, greek yoghurt, lemon juice, minced garlic and salt/pepper into a bowl and whisk to combine.
2. Add the purple cabbage and carrot into the bowl with the dressing and stir to combine.
3. To construct the sandwich spread the avocado onto the bread, followed by the shredded roast chicken and then lastly the homemade slaw.
4. Cut in half and enjoy!
