Coconut & Raspberry Ripple Proats


Choc Raspberry Ripple Zoats (Serves 1)

Ingredients

40g rolled oats

100g liquid egg whites

60g zucchini, grated

35g raspberries

1/2 tsp cinnamon

3g shredded coconut

50mls water

20g choc honeycomb protein powder (from Maxine's Burn)

Top with:

5g shredded coconut

30g raspberries

10g Nuttvia hazelnut spread

Method:

1. In a saucepan, place the oats, egg whites, zucchini, raspberries, shredded coconut, cinnamon and the water. 2. Heat the saucepan over a low heat and stir continuously until the oats and zucchini are soft. Remove from heat and let cool for about 1 minute. 3. Stir in the protein powder until well combined. 4. Place oats in a serving bowl and top with the raspberries and coconut.
