Ingredients 250g low carb potatoes (Zerella brand) Onion salt Garlic seasoning Veggie salt Pepper
Toppings 20g light mozzarella cheese 45g short cut bacon 70g Coleslaw (pre brought) 20g corn kernels 15g dijonaise mayo (97% fat-free) 20g salsa
Method: 1️. Preheat a fan-forced oven at 200 degrees. 2️. Slice the potatoes in half and place into a microwavable container. Pop into the microwave for 2 minutes or until just soft. 3️. Place the potatoes onto a lined baking tray and sprinkle with onion salt, garlic seasoning, veggie salt and pepper. 4️. Place the potatoes into the oven for approximately 30-40 minutes or until cooked. 5️. While the potatoes are cooking, dice the bacon into pieces. Preheat a non-stick frypan over medium heat and sauté the bacon until cooked. Mix the coleslaw, corn and mayo together in a small bowl. 6️. Once the potatoes are cooked remove from the oven and place onto a serving plate and top with the cheese, slaw, bacon and salsa. 7️. Serve!
